  • Heat the vegetable oil in a large skillet over medium-high heat.

  • Add the ground beef to the skillet and cook until browned and fully cooked.
  • Add the soy sauce, gochujang, salt, and pepper to the skillet and stir until well combined.
  • Add the chopped kimchi and kimchi juice to the skillet and stir until heated through.
  • Heat the corn tortillas on a griddle or in a dry skillet for 1-2 minutes on each side.
  • To assemble the tacos, place a spoonful of the beef and kimchi mixture onto each tortilla.
  • Top with sliced avocado, a dollop of sour cream, and chopped cilantro.
  • Serve with lime wedges for squeezing over the top of the tacos.
