Ingredients
- 1 cup Quinoa
- 2 cup Water
- 1 can Black Beans Rinsed And Drained
- 1 Avocado Diced
- 1 Red Bell Pepper Diced
- 1/2 Red Onion Diced
- 1 Lime Juiced
- 1/4 cup Cilantro Chopped
- Salt To Taste
- Pepper To Taste

Instructions
- Rinse the quinoa in a fine-mesh strainer and place it in a large saucepan with 2 cups of water.
- Bring the water to a boil, reduce the heat to low, cover the saucepan, and let the quinoa cook for 15-20 minutes, or until all the water has been absorbed.
- Remove the saucepan from the heat and let it sit for 5 minutes.
- In a large bowl, combine the cooked quinoa, black beans, avocado, red bell pepper, red onion, lime juice, and cilantro.
- Season with salt and pepper to taste.
- Heat a large skillet over medium-high heat.
- Add the quinoa mixture to the skillet and cook for 5-7 minutes, stirring occasionally, until heated through.
