Seared Scallops With Asparagus And Garlic Mashed Potatoes Recipe
Ingredients
- 8-10 Large Scallops Patted Dry
- 2 tbsp Olive Oil
- 1 tbsp Unsalted Butter
- 1 Small Bunch Asparagus Trimmed And Cut Into 2-Inch Pieces
- 2 Medium Potatoes Peeled And Cut Into 1-Inch Cubes
- 2 Garlic Cloves Minced
- 1/4 cup Heavy Cream
- 2 tbsp Unsalted Butter
- 1 tbsp Fresh Parsley Chopped
- Salt & Pepper To Taste
Instructions
- Season scallops with salt and pepper.
- Heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat.
- Add scallops to the skillet and cook for 2-3 minutes per side, or until golden brown and cooked through.
- Transfer scallops to a plate and set aside.
- In the same skillet, melt 1 tablespoon of butter over medium heat.
- Add asparagus to the skillet and cook for 5-7 minutes, or until tender.
