  • In a large mixing bowl, whisk together soy sauce, rice wine or sherry, and beaten egg.
  • Add chicken pieces and stir to coat.
  • Cover and marinate in the refrigerator for at least 30 minutes.
  • In a separate bowl, whisk together soy sauce, rice vinegar, hoisin sauce, honey, cornstarch, sesame oil, grated ginger, minced garlic, and red pepper flakes to make the sauce.
  • Heat vegetable oil in a wok or deep frying pan over medium-high heat.
  • Dredge marinated chicken in cornstarch, shaking off any excess.
  • Fry the chicken in the hot oil until crispy and golden brown, about 3-4 minutes per side.
  • Use tongs to remove the chicken from the pan and place it on a plate lined with paper towels to drain.
  • In a separate pan, heat the sauce over medium heat until it thickens and begins to bubble.
  • Add the fried chicken to the sauce and stir to coat.
  • Serve hot with rice or noodles.
