Ingredients
- 1 tbsp Olive Oil
- 1 tbsp Butter
- 1 Onion Diced
- 2 Garlic Cloves Minced
- 1 lb Mushrooms Sliced
- 1 cup Arborio Rice
- 4 cups Chicken Broth OR
- Vegetable Broth
- 1/2 cup Grated Parmesan Cheese
- 1 tbsn Truffle Oil
- Salt & Pepper To Taste
Instructions
- In a large pot, heat olive oil and butter over medium heat. Add the diced onion and minced garlic and cook until soft and translucent, about 5 minutes.
- Add the sliced mushrooms and cook until tender, about 8-10 minutes.
- Add Arborio rice to the skillet and stir to coat the grains with the mushroom mixture.
- Add 1 ladle of broth to the skillet and stir until the broth is absorbed.
- Continue adding the broth 1 ladle at a time, stirring constantly, until the rice is cooked and the mixture is creamy, about 25-30 minutes.
- Stir in grated Parmesan cheese and truffle oil. Season with salt and pepper to taste.
- Serve hot and enjoy!
