For The Choux Pastry:

  • Preheat your oven to 425°F.
  • In a medium-sized saucepan, heat the water, butter, and salt over medium heat until the butter has melted.
  • Add in the flour and stir until a dough forms.
  • Remove the pan from the heat and let it cool for a few minutes.
  • Beat in the eggs one at a time until the mixture is smooth and shiny.
  • Transfer the dough to a piping bag and pipe 4-inch strips onto a baking sheet lined with parchment paper.
  • Bake for 15 minutes at 425°F, then reduce the temperature to 375°F and bake for an additional 10-15 minutes until the eclairs are golden brown and crisp.

For The Filling:

  • Whip the heavy cream, vanilla extract, and powdered sugar until stiff peaks form.
  • Transfer the mixture to a piping bag and fill the cooled eclairs.

For The Chocolate Glaze:

  • Melt the chocolate chips, butter, and corn syrup together in a double boiler, in the microwave, or in a saucepan over water.
  • Dip the tops of the eclairs in the glaze and let them cool before serving.
