- Large Skillet Or Sauté Pan With A Lid

- 1/4 cup Olive Oil
- 1 Onion Large, Chopped
- 3 Garlic Cloves Minced
- 2 Red Bell Peppers Chopped
- 28 oz Tomatoes Diced
- 2 tsp Cumin
- 1 tsp Paprika
- 1/4 tsp Chili Flakes
- Salt To Taste
- Black Pepper To Taste
- 8 Eggs Large
- Fresh Parsley Chopped (Optional)
- Crusty Bread For Serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onions and sauté for 3-4 minutes, or until they become translucent.
- Add minced garlic and chopped bell peppers to the skillet and sauté for 5-7 minutes, or until the vegetables become tender.
- Pour in the can of diced tomatoes and stir to combine.
