- 1 cup Dates Pitted, Chopped
- 1 tsp Baking Soda
- 3/4 cup Boiling Water
- 1 cup All-Purpose Flour
- 1 tsp Baking Powder
- 1/4 tsp Salt
- 1/2 cup Granulated Sugar
- 1/4 cup Unsalted Butter Softened
- 1 Egg Large
- 1 tsp Vanilla Extract
For The Toffee Sauce:
- 1/2 cup Unsalted Butter
- 1 cup Brown Sugar
- 1/2 cup Heavy Cream
- 1 tsp Vanilla Extract
Instructions
- Preheat your oven to 350°F (175°C) and grease the baking dish lightly.
- In a medium saucepan, combine the chopped dates and baking soda. Pour the boiling water over them and let it sit for 5 minutes to soften the dates.
- In a separate bowl, sift the flour, baking powder, and salt together.
- In another mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the egg and vanilla extract, and beat until well combined.
- Gradually add the dry flour mixture to the wet ingredients, mixing until a smooth batter forms.
- Stir in the date mixture, including the liquid, into the batter until evenly distributed.
- Pour the batter into the greased baking dish and smooth the top with a spatula.
- Bake for 25-30 minutes or until the pudding is firm and springs back when touched lightly.
