  • In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until frothy.
  • In a mixing bowl, combine the flour and salt. Cut the cold butter into small pieces and add it to the flour mixture. Mix with your fingers until the mixture resembles coarse crumbs.
  • Pour in the yeast mixture and knead the dough until it becomes smooth and elastic. Cover the bowl with plastic wrap and let the dough rise for 1 hour or until doubled in size.
  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the dough into a large rectangle. Sprinkle the granulated sugar evenly over the dough and fold it into thirds, like a letter.
  • Roll out the folded dough again into a rectangle and sprinkle with more granulated sugar. Fold it into thirds once more.
  • Cut the dough into 4 equal portions and place each piece in a greased ramekin or muffin tin.
  • Sprinkle extra sugar on top of each portion and let them rest for 15 minutes.
  • Bake the Kouign-Amann for 20-25 minutes or until golden brown and caramelized.
